Krakhuna 2021 Baia's wine (Baia's Wine)

Baia's Winery, founded by two sisters with a passion for their terroir, has steadily become a renowned name both within and outside of Georgia. Using the traditional Georgian winemaking method of Qvevri (large clay vessels for fermentation and ageing), Baia's Winery creates exquisite wines with a particular focus on classic Imerietian varieties such as Tsitska, Tsolikauri, and Krakhuna. The Krakhuna grapes for this wine were sourced from vines growing 324 metres above sea level, on free-draining alluvial soils. Baia’s Winery has a natural, low-intervention approach to wine-making. The wines are unfiltered, low in sulphites, and exclusively fermented with wild yeasts. This amber wine can be described as honeylike, both in appearance and mouthfeel. Sweet scents of apricot, persimmon and citrus peel waft from the glass, with a slight herbal accent. The palate is laden with stone fruit flavours, supplemented aby hints of honey, spice and considerable tannin structure. It is remarkably full-bodied for a white grape varietal and can be aged for several years. The finish is long, dry and deeply satisfying. For pairing, consider hearty dishes with a hint of fruit. This wine would complement pork and apple sauce beautifully, or any dish with grilled meat at its centre.
