Franciacorta comari del salem 2016 (Uberti)

Drink now or cellar for up to 10 years. Serve chilled. The Uberti family can trace their grape-growing ancestry back to 1793 in the commune of Ebrusco in Lombardy, but it was only in 1980 that G. Augustine Uberti and his wife Eleanor started to make Franciacorta sparkling wines from their 9 hectares of vineyards. Over the years they’ve become known as one of the top Franciacorta producers, and today they work alongside their daughters Silvia and Francesca in the family business. Comari del Salem is their flagship single vineyard sparkling wine sourced from a prized plot that was originally purchased aby the family from the son of the local midwife or "comari". This theme carries through on the striking label which features an image of the globe embraced aby Mother Earth, who helps bring things to life much like a midwife. The Chardonnay and Pinot Bianco grapes destined for this cuvee are manually harvested and carefully sorted before being fermented in stainless steel tanks and oak barrels. The wine is then left to mature for 48-60 months after the fermentation to add extra complexity and a rich, creamy texture. On the nose there are enchanting notes of bright citrus, green apple, and orchard fruits, while the first sip reveals a smooth mousse, mouthwatering freshness, and light, elegant finish. Serve as a refined aperitif or celebratory accompaniment to canapes, fresh seafood, sushi, or grilled fish.
